I’m Back

Hey everybody. I haven’t posted anything on the site for quite a while, as I’ve been super busy. In the time that I was gone, I got out of the security industry, and now I’ve been working from home as a freelance writer, which is great, because I can put my English degree to use and actually get paid for it. I also moved out of New York City, and now I live in upstate New York. Most of the reason for that is because of the high cost of living…my wife and I were sick of it. Now we’ve been able to buy a house, have an actual backyard, and get a dog, all of which is awesome.

A side effect of my quitting security and working from home is that I’ve now given up on eating microwaveable dinners and things of that nature. This is probably for the best, because although there were some that I really liked, they were high in sodium and preservatives. Now, since I’m at home a lot more, I can cook for myself, and I’m making a real effort to eat healthier. That means more fruit, nuts, and cereal. I also have been trying to incorporate a lot more fiber into my diet, because I’ve had a couple of problems with hemorrhoids, and let me tell you, they’re no fun at all. The last thing that I’ve been doing is drinking a lot more water, which also helps get rid of the hemorrhoids. I guess that’s part of getting older; I can’t just eat whatever like I used to. On the one hand, it’s unfortunate, but at the same time, I’m feeling a lot healthier than I used to when I was eating a couple of microwave dinners five days out of the week.

Here’s some curried chicken with red beans that I made last night.

Here’s a picture of what I made for dinner last night. It’s the same recipe that I posted here a couple of years ago where I used curry paste along with some cut-up chicken pieces, but in this version I substituted two cans of red beans and didn’t include any potatoes. I also ladled it over some brown rice instead of white. As past of my new diet, I’ve tried to cut down on carbs like potatoes, white rice, and regular pasta. I’ve been substituting brown rice and whole-wheat pasta instead.

I’m going to try to post on the site more regularly again, and in the coming weeks, I’m also going to tell you about some of my favorite ways to incorporate more whole grains and fiber into your diet. It’s working wonders for me, so I’d like to pass that information on to you. See you again soon, folks.
